Baptiste Ramounéda, back in the Gers after 15 years in the fashion industry in Paris, has transformed his simple family restaurant in the heart of the spa village of Castéra-Verduzan, into a Michelin restaurant and small boutique hotel with four distinctive rooms — it’s both a new, clean way of life to get back one’s strength and a country retreat.

Why Le Florida ?

Nothing to do with Florida in the U.S! In the late 1930s, huge numbers of Spaniards fleeing the Civil War arrived in the region. In 1935, Angèle, Baptiste’s great-grandmother, a passionate cook who owned the inn, had windowboxes of geraniums along the façade of the stone house.
And so the Spanish exiles called the building la casa florída — the house of flowers.
